Caramelized Onion Dip

As I’ve mentioned, last weekend Jamie threw a Superbowl BBQ and we had a truly American, gluttonous feast. I’ve already shared my very simple Bacon-Wrapped Jalapeño Bites recipe, but there’s another easy snack I often bring to parties: caramelized onion dip.

Caramelized Onion Dip

Caramelized Onion Dips
(makes 2 cups)

  • 3 onions, chopped
  • 2 shallots, sliced (optional)
  • 3 tbsp butter
  • 1 cup sour cream
  • 1/2 cup greek yogurt
  • 1/2 cup cream cheese
  • chives (optional)
  • onion salt, to taste
  • (garlic) pepper, to taste

If you’ve never caramelized onions before, you are missing out. Heat up the butter in a skillet. Toss in onions (and thinly sliced shallots, if you want to make it extra-fancy) when the butter’s hot. Saute on medium-low heat for about 45 minutes, stirring your onions every 10 minutes to evenly brown them.

When they’ve reduced to a soft, caramelized mess, turn off your heat and let them cool. Mix in sour cream, yogurt and cream cheese. Add onion salt, garlic salt, salt, and pepper to taste. Refrigerate and serve cold. Sprinkle some scallions on top if you’re so inclined, and watch your friends devour this delicious dip!
