Bacon-Wrapped Jalapeño Bites

The Super Bowl means one thing to me – snacks. I’ve never watched more than a few minutes of football and have very little interest in the game itself. I do, however, like making terribly delicious, guilt-inducing appetizers – and there is none so delicious as the jalapeño popper.

My best friend Jamie (of Paint The Gown Red) threw a Super Bowl BBQ on Sunday, where it seemed every single one of our friends had the same idea – to show up with an absurd amount of food. All in all we had bacon-wrapped hot dogs, grilled veggies, pulled pork sliders, spicy chicken wings, potato salad, pasta salad, jalapeño bites, seven layer dip, caramelized onion dip, pull apart cheesy bread, vanilla cupcakes, chocolate sprinkle ice cream cone cupcakes, and cookie dough truffles. (Oh, and beer. Lots of beer.)

Sunday morning, Alexei and I found ourselves in a race against time to finish our respective dishes. As he cut up a loaf of bread and smothered it in butter, I sliced jalapeños. As he poured funfetti cupcake batter into adorable little ice cream cones, I caramelized onions and shallots. We finally showed up slightly late, covered in chocolate frosting, and ready to BBQ.

These are a slightly different twist on the breaded popper you may be familiar with. Rather than dipping my jalapeños in egg and breading, I wrapped ’em in bacon and popped them in the oven. Naturally, I borrowed a recipe from The Pioneer Woman. (If you’re ever in need of a tasty, indulgent snack, she’s your girl.)

Bacon-Wrapped Jalapeño Bites

makes 20 bites)

  • 10 jalapeños
  • 8 oz cream cheese
  • 1 lb bacon
  • toothpicks

Slice jalapeños in half, length-wise, and scoop out the seeds with a spoon. Here’s the trick – if you like your jalapeño bites extra spicy, leave a little bit of the white flesh. (I scooped most of mine out, since I was serving to a sizable crowd.) Fill your jalapeños with a dollop of cream cheese. Then, slice your bacon into thirds (or, if you’re using center-cut bacon like me, in half) and tightly wrap around jalapeños (mmm). Use a toothpick to secure the bacon.

Bake at 375˚ for 20-25 minutes. If the bacon looks undercooked, just keep it in for another minute or two. Serve hot! These are a great snack for parties, movie marathons, sports events, or even as a spicy pick-me-up after a crummy day.
